I would guess that the secret ingrediant is the Pork Liver and of course the spices were not detailed but that has to be what makes it cajun (the right type of pepper).
One day I may look up on the web to see if there are cajun cooking pages with 'real' boudin described in detail - there has to be, I just don't take the time to look.
